HEADING TO THE OREGON COAST TO CELEBRATE PASSOVER?
Unfortunately we have limited access to a synagogue on the Oregon Coast. While the nearest synagogue to our North Coast area is in Portland, you can find Congregation Beit Salmon meeting regularly in Astoria.
In the meantime, we’ve rounded up some yummy, tasty breakfast and brunch Matzo recipes for you to enjoy while celebrating Passover on the Oregon Coast with your family or friends.
HOMEMADE MATZO

FRENCH TOAST MATZO WITH DILL CREAM CHEESE
Over at Joy of Kosher, Jamie Gellis takes French Toast, and makes it kosher for Passover. Or any other occasion you want to enjoy this scrumptious treat. Or add a little bit of extra and make it your own – lox anyone?
MATZO BREI EGGS BENEDICT WITH LOX
Speaking of breakfast and lox, you’ll love this version of eggs benedict made with matzo and lox from The Nosher. Topped with a generous helping of creamy, homemade hollandaise sauce, it will be your new favourite breakfast!
HOMEMADE MATZO BAGELS
Absolutely need your bagel fix? Try these Matzo Bagels during Passover, made with matzo meal from Living Sweet Moments. What would you top them with? Poppy seeds, chopped onion, or cinnamon?

Lastly, Tori Avey offers her five star Spinach, Feta and Artichoke Matzo Mina. This Greek-style Sephardic Matzo Casserole might be perfect for Passover Seder, but this light, vegetarian dish is great for brunch, too.
